I'M teaching a cooking class...hahaha!

So, I made a flippant comment in our RS committee meeting last week, and next thing I know, I'm teaching a class! Don't get me wrong, I am excited, but HELLO!!! It's me we are talking about. Julia Child, Kelly S, and Rachel Ray...I am not! :)

So I'm going to teach about cooking for people with different allergies and celiac disease. Any more, it seems like when those sign ups go around for people to bring them dinner, there are always at least a few things they can't have, so hopefully this will be helpful for at least one of the two people that shows up. If any of you out there have any great ideas about what kind of stuff I should cover, or what you would most like to learn at something like this, I would be most, incredibly grateful!

My nephew is highly allergic to dairy and peanuts. He is only 18 months, so my sister and I have spent the past year looking for things he can eat. First, we were so happy to find out that he can have mayonnaise. Think about it, spending your whole life not eating potato salad or always having a dry turkey sandwich? YUCK! Who knew mayo was made with soy?? On the other hand, it has been so frustrating to find that your normal every day standbys all have dairy. Most canned soups are processed in factories that use dairy, so those are all no goes even if they don't actually contain dairy. Most mixes, like taco seasoning, contain dairy. SO hard!! It is a daily struggle to find things he can eat and eating out at a restaurant where there is the possibility of cross contamination is a nightmare. I am so happy you are teaching this class for those who are truly in need. Good luck!

my mom has Celiac--give her a call if you need ideas. Fun for you that you get to teach that class. Fun in a positive way, but hard as well. Best to you on that.

Our family doesn't have food allergies thank goodness. We'd be in trouble if we did. Just bug bites for now. They make us swell up pretty good. :) But I have a step brother who doesn't eat gluten so I'm always looking for recipes to bring to family gatherings. I found out about one that seems to be pretty good. http://gotglutenfreekids.blogspot.com/
Maybe that'll give you some ideas.

For me, I look for fast, cheap and relatively healthy recipes that don't require me to go to the store for a bunch of random ingredients. If I were at your class, that's what I'd be looking for. Good luck!
